First up, the recipe for potato pancakes.
The Double-Potato Pancake with Smoked Salmon!
Ingredients:
2 cups of grated and peeled sweet potatoes
(not a fan of sweet potatoes, use white potatoes)
1/2 cup grated onion
1 egg, beaten
3 Tbs. chopped fresh parsley and a few leaves for garnish
2 Tbs. cornstarch
1/4 tsp. salt
1/8 tsp. black pepper
1/2 cup oil
1 package of Boursin Garlic and Fine Herb Cheese
1/2 cup sour cream
1 oz. sliced smoked salmon--cut into 16 thin strips
-----------------------------------------------------------------
Directions:
Preheat oven to 325 degrees. Press and drain excess liquid from the potatoes
and onions; transfer to a large bowl.
Stir in the egg, chopped parsley, cornstarch and the salt and pepper, until combined.
In a large nonstick skillet-heat 1/4 cup of oil over medium heat.
Working in batches, shape scant 1/4 cupfuls potato mixture into 1 3/4 inch wide patties.
Cook and when you start to see a light brown color on the patty turn it over.
about 4 to 5 minutes each side. Drain the patties on paper towels And just repeat the process
until all of the potato patties are gone. (add more oil if necessary)
And lastly, coat a jellyroll pan with cooking spray, and arrange the patties on the pan,
bake for 15 to 20 minutes, or until cooked through. And to finish up this delectable
dish, stir the sour cream into the cheese and just before serving--top pancakes with
the cheese mixture, some pieces of salmon and a few parsley leaves (for garnish).
That's it for the potato pancakes, now onto the adult beverage.
The Hanukkah Martini!
Directions:
Fill an ice tray with Martini Gold Wildberry Martini mixer.
Freeze. Dip rims of 2 martini glasses into light corn syrup; dip into blue sugar.
Fill cocktail shaker with 1 cup plain ice cubes; add 1/4 each citrus vodka and
raspberry vodka. Cover; shake very well and strain into the glasses.
And finish it up by adding the mixer, the ice cubes and top it off with tonic water.
This is enough for 2 servings.
Important: look for the flavored vodkas at high-end liquor stores.
That's it- a meal that'll satisfy you whether you're Jewish, Christian,
Buddist, Muslim or non-believer, Enjoy!
