Elisabeth Hasselbeck of the T.V. show "The View" makes it known to any and everyone the tough times she had when she was eating wheat products. Since going wheat-free, Ms. Hasselbeck has to look for wheat-free versions of her favorites. If you too, are wheat-free or if you're thinking of going wheat-free, here's a recipe for Waffles that not only taste great, they won't have you running to the bathroom, or upsetting your stomach, or making you itch, or causing skin irritations (rashes) or giving you a head full of dandruff.
With that said, look below and try out the gluten-free waffles for folks who can and folks who can't tolerate wheat.
The Gluten-Free Waffles! Ingredients: 3 eggs (preferably omega-3 eggs) 1 cup raw cashews 1/3 cup almond milk (or any non-dairy milk) 3 tbsps. dark honey or maple syrup 3 tbsps. coconut oil (melted) 1/4 tsp. baking soda 3 tbsps. coconut flour *
The Directions: Break out the waffle iron and the blender. Put the eggs, cashews, milk, honey and coconut oil in, blend on high until smooth. Add the last 2 ingredients, and a pinch of Himalayan or sea salt, blend for a min. Heat up the waffle iron and pour on some coconut oil, pour on the batter and cook for a min. or until the light comes on or goes off. Open up the waffle iron and remove the waffles. Serve with fresh or frozen (and thawed) fruit, berries, cherries, peaches or sliced apples and some maple syrup. This should be enough for 6 waffles, and if you need more waffles, repeat the above process or double the ingredients in the beginning. These will also store in the freezer for later use.

Luckily, keeping cats entertained is easier and a lot less expensive than it is for kids, so if you have a cat or two and want to keep them busy, just do the following... Take an old shoe box with the lid, and cut out 3 holes in the top and sides, then place a ping-pong ball or two inside and finish it up by taping up the ends.

Rachael Ray's Roasted Vegetables with Rosemary!
Ingredients: It's up to you, buy Fall vegetables like parsnips, turnips, butternut squash, carrots, eggplant, green and yellow squash, sweet potatoes and white button mushrooms. 5 to 6 garlic cloves (smashed) 1/4 cup extra-virgin olive oil. 3 tbsps. finely chopped fresh rosemary Sea salt and fresh pepper (ground)
Turn on the oven to 400 degrees, chop up the vegetables, (important tip- harder vegetables should be put in first and the softer vegetables-eggplant, green and yellow squash after a few mins. of cooking). Toss the vegetables, garlic, olive oil and rosemary into a deep roasting pan, cover with foil and cook for 5 to 10 mins. And lastly, put in the softer vegetables and cook for another 5 to 8 mins. Poke the vegetables with a fork to check their tenderness. Let the vegetables cool and eat them as is, or add grated parmesan or romano cheese. Or add some cooked tomato sauce, or put some of the vegetables over brown rice and add some low-sodium soy sauce.
That's it- And don't ever let it be said again, that Rachael Ray doesn't cook anything that's good for your health.

Paula Deen's Sweet Potato (or Yam) Casserole! Ingredients: 2 cups of heavy cream 1/4 tsp. cayenne pepper 3 to 4 medium sweet potatoes or yams, they should be about 2 1/2 lbs. when peeled and cut them into 1/8" thick rounds, 9 cups. 1 1/2 tsp. salt 3/4 tsp. pepper 3/4 tsp. dried thyme 1 cup crushed saltine crackers, about 20 2/3 cup grated Parmesan cheese 1/2 cup chopped pecans 1/4 cup butter, melted
Directions: Preheat oven to 375 degrees, Coat a 13 X 9 baking dish with some oil or coat with cooking spray. Next, whisk the heavy cream and toss in the cayenne pepper. Arrange 1/3 of the S.P's (or Yams)in even layer on bottom of baking dish. Season with 1/2 tsp. salt and 1/4 tsp. of the pepper and thyme. Pour in 2/3 cup cream mixture and then repeat for 2 more layers. In small bowl, combine cracker crumbs, parmesan, pecans and butter. Stir it up good, so the butter is covering the crackers and pecans. Scatter mixture over top of casserole; cover with foil and bake for 15 mins. And lastly, uncover it and bake another 30 to 40 mins. just until the top is a golden brown. This dish should between 8 and 10 people. Calories per serving- 365 Fat grams- 29 Cholesterol- 83 mg. Sodium- 590 mg.
