A Singer's Rx For a Great Tasting Holiday Pie!

                              A Sweet Treat For Thanksgiving! 

According to recent news, singer Patti Labelle has started selling her homemade sweet
potato pies at Walmart. The pies are selling so well, some enterprising minded
people are bringing the pie homes and reselling them for astronomical prices. 


Well, if you're a fan of sweet potato, or pumpkin or butternut squash pie,
there's no need to pay $10 or $20 or even $50 for one.
If you have some time and a little talent, you can just copy the recipe
listed below.
A Recipe For Sweet Potato Pie!
Ingredients: 

2 cups of sweet potato, puree
1 can of condensed milk, Sweetened
2 eggs 

1/2 stick of butter (melted)
1 Tbs. vanilla extract
1/4 tsp. of each ground cloves, cinnamon and ginger 

1/2 cup  of brown sugar
2 tsp. lemon juice
2 Tbs. flour  (to tighten things up)
1 crust already prepared, or make your own, recipe down below.
whipped cream or ice cream

Directions.
Preheat oven to 400 degrees
Pour everything into a bowl (everything except the lemon juice and flour)
and whisk together until mixture is smooth. Add the flour and lemon juice
and whisk for another 30 seconds. 

Pour this into your pie crust and place the pie plate on a cookie sheet (in case
of spilling) Place the pie in the oven, reduce the temperature to 325 and bake for
40 to 45 minutes. Check on the pie to make sure the crust doesn't brown
too quickly. (if it does, cover the crust with aluminum foil) Remove the pie when
it's no longer jiggly or insert a toothpick in the center and if the toothpick is clean,
then you'll know the pie is done.
Allow the pie to cool and serve with whipped cream or ice cream.
And for the adults, you can add a little bourbon to the whipped or ice cream.
Another tip: If you have butternut squash or pumpkin (canned) feel free to use
them as substitutes for sweet potatoes.

Now on to the pie crust, a lot of people freak out at the thought of making 

their pwn pie crust, don't be, just use the simple recipe listed below...
Ingredients:
3 cups all-purpose flour
1 tsp. salt
3/4 cup shortening, cut into pieces
3/4 cup butter 1 1/2 sticks, cut into pieces
1 egg
1 Tbs. white vinegar
5 Tbs. very cold water.

Directions: 

Combine flour, salt, shortening and butter in a large bowl. Using pastry cutter,
gradually work it all together until mixture resembles coarse crumbs. Beat egg with fork
and add to mixture along with vinegar. Add 1 Tbs. water; stir it all together until dough
forms a ball, add more water if necessary. Form mixture into 2 balls; shape into disks.
Wrap separately in plastic food bags. Seal tightly and refrigerate it until you're ready
to use it. Or place it in the freezer for later use. If you do place the dough in the freezer,
take it out for 30 to 40 minutes, allow it to thaw and then roll out 2 pie crusts.
That's it, easy, breezy, pie crusts.
